Vegan Chocolate Mousse

Ingredients

  • 100g dark chocolate (70% )

  • 1 tsp vanilla extract

  • ½  cup aquafaba

  • 2 tbsp powdered sugar

Preparation

  1. Melt the chocolate in a heatproof bowl over a pan of simmering water.

  2. Once melted, take off the heat and stir in vanilla extract.

  3. Meanwhile, whisk the aquafaba until it starts to foam up (approximately 5 mins if using an electric whisk). 

  4. Add sugar to the aquafaba whilst continuing to whisk until you get hard peaks. 

  5. Mix in a quarter of the whipped aquafaba with the melted chocolate.

  6. Fold in remaining aquafaba.

  7. Poor into glasses of choice and chill  in the fridge for 2-3 hours.

Tips

You can replace the vanilla for any other flavoured extract to take this mousse into many different directions. Try it with Orange or Peppermint. Yum Yum.
